Apple Breakfast Cake

Since the lovely large bags of bakery mix finally ran out (we used to have 5 of them) I had to come up with a new recipe which would taste just as good as the one I use for the Bisquick Peach Breakfast Cake. With some experimenting and luck I was able to match the flavor, texture, and sweetness...all using regular baking ingredients! Enjoy!


Ingredients for Cake
1 cup plain yogurt
1 Tablespoon vanilla
1 teaspoon almond flavor
1/2 cup applesauce
1/2 cup oil
1/2 cup water
2 eggs (or 4 Tablespoons egg replacer + 1/2 cup water)
4 cups flour
1 Tablespoon coriander
1 cup white sugar
2 Tablespoons baking powder
6 apples, peeled & diced

Ingredients for Sugaring
2 Tablespoons butter, melted
1/2 cup brown sugar

Ingredients for Glaze
3/4 cup powdered sugar
1 Tablespoon butter, melted
1 Tablespoon + 1 teaspoon milk

Directions
1. Preheat the oven to 350 degrees.
2. In the first bowl place the yogurt, vanilla, almond, applesauce, oil, water, and eggs (or water for eggs if using egg replacer).
3. In a second bowl place the flour, coriander, and white sugar. Add in baking powder.
4. Stir the wet ingredients into the dry ingredients.
5. Add in the diced apple pieces and mix well.
6. In a third bowl mix together the butter and brown sugar for 'sugaring'.
7. In a greased 3 quart glass baking dish pour the mixed dough.
8. Using a spoon 'glaze' the brown sugar mix over the dough.
9. Bake the cake in the oven for 40 minutes.
10. In a fourth bowl mix together the powdered sugar, butter, and milk for the glaze.
11. Once the cake is finished baking, glaze it with the powdered sugar glaze.
12. Serve warm.
