Cornbread In A Pan

The original recipe is one I found via Pinterest which led to the blog Can You Stay For Dinner. My mom has a recipe she has pretty much always used...but it's not one of my favorite...honestly I don't like cornbread period...it doesn't matter who makes it, I probably won't eat it. I had this pin saved on Pinterest from almost a year ago and decided it was time to give it a try tonight since we were having bean soup and you must eat cornbread with bean soup! Well, let me tell ya....I ate two WHOLE, big, PIECES, by-my-self!!! Wow! And out of the whole pan there were only about 4 pieces left...so it was a huge hit for the 6 of us who ate dinner this evening!


Servings: 1 9x13 pan of cornbread which can be cut into differnt sizes for serving.

Ingredients
1/2 stick butter
1 cup oil
1 cup water
1 cup milk
2 Tablespoons white vinegar
2 eggs
4 Tablespoons sugar
2 cups cornmeal
2 cups white flour
2 Tablespoons baking powder
1 teaspoon baking soda

Directions
1. Preheat oven to 400 degrees.
2. In a microwave safe bowl melt the butter.
3. Add in the oil, milk, water, white vinegar, and eggs. Mix until well blended.
4. Add in sugar, cornmeal, and flour. Before mixing add in the baking powder and baking soda. Mix until everything is blended.
5. Pour into a greased 9x13 glass baking pan.
6. Bake in oven for 30-35 minutes. Serve warm and with butter (if you so wish).

    1. Well, I will say it was a huge hit! We like to eat a piece after the main meal with butter and honey drizzled over it! That is an amazing "southern" desert! Lol. :)

  3. I love cornbread. Maybe the addition of vinegar makes it extra yummy. I have never used vinegar in a cornbread recipe, so I am thinking that might be why you liked it. :)

    1. Yes that could be. I usually almost never make cornbread...but when I have I've never used vinegar...or buttermilk. Aparently the combination of vinegar and regular milk is supposed to replace buttermilk (which was called for in the original recipe linked).
