Cooking For 2 | Quick Baked Potatoes


If you haven't noticed...I like potatoes! There are several CookingFor2 posts that have to do with potatoes, and now I'm adding another one! This is something that I like to make when I'm in a rush, but want something tasty to eat, or if you're just having a lazy day this is another easy dinner to fix up in less than 10 minutes per potato. I love it and the toppings are endless!


Ingredients
2-4 large baking potatoes
Butter
Sour cream
Cheddar cheese

Other Ideas
Ranch dressing
Picante Salsa
Bacon Bits
Green onions

Directions
1. Select your potato and take it to the sink. Scrub off the dirt and rinse.
2. Put the potato in the microwave and heat for 3-5 minutes. If it's a smaller potato 3 minutes should cook it just fine. If it's larger it might take 5 or more minutes, but start with five. When the microwave beeps stick a fork in the potato. It should go in easily. If it sticks or gets stuck coming out cook the potato a minute or two longer. Check it again when the microwave beeps.
3. Once your potato is cooked place it on a plate and chop it up. I usually keep the skins on.
